Multi tower continuous distillation uses several different towers to complete the distillation process. Even if a strong liquor reaches 96% alcohol concentration, it is not without flavor, and will contain a very small amount of Fusel, methanol and other congeneric elements. When it comes to vodka, some light rum or gin and other base liquors, it is more appropriate, or legally required, to further reduce the flavor of spirits. The two most commonly used methods are: one is hydroselection, which can remove fusel; the other is demethylation, which is used to remove methanol. The operation of both methods depends on the volatility of Fusel and methanol in ethanol solution. If the alcohol content of a highly distilled spirit is reduced to 20%, the volatility of Fusel becomes stronger. In a hydraulic selection tower, the highly distilled spirits enter from the middle of the tower, mix with the hot water from the top to dilute, and meet with the steam heated from the bottom to the top. Fusels become more volatile, rising to the top of the tower, while diluted spirits are collected at the bottom. Methanol is more volatile when the alcohol concentration reaches 96%. In a demethylation tower, spirits are slowly heated, methanol can be separated through many distillation plates, and collected at the top, so that more pure and higher concentration ethanol remains at the bottom.Demethylation is generally necessary for the production of vodka, because the legal content of methanol in vodka in the EU is extremely low. Therefore, a five column distiller can include a separator, a distiller, a water selection tower, a second distiller to make the alcohol solution of Fusel return to 96% concentration through the past, and a demethylation tower. This system is very complex, but it can also produce a large number of different products.
